Trio of Cookies

Made by Maurice, this trio of cookies brings together classics everywhere – Classic Chocolate Chip cookies, gooey Matcha Cookies with white chocolate chips, and lemon cookies with yuzu too to add in some Japanese flavourings! Perfect by themselves, all together, or with a good cup of tea!

Chocolate Chip Cookies

Ingredients (15 cookies)

  • 80g butter
  • 100g dark chocolate (chips)
  • 1 egg
  • 120g flour
  • 80g brown sugar
  • 1.5tsp baking soda
  • pinch of salt

Method

  1. Pre-heat the oven to 180C.
  2. Mix butter and sugar together until soft.
  3. Add eggs and mix until combined.
  4. Add flour, salt & baking soda and mix.
  5. Finally add the chocolate chips.
  6. Cover a baking tray with baking parchment.
  7. On top, place balls of the cookie dough on top with plenty of space in between for them to spread out as they bake.
  8. Bake for 10 minutes or until golden brown.
  9. Let cool, and enjoy!

Matcha & White Choc Chip Cookies

Ingredients (15 cookies)

  • 95g butter
  • 130g flour
  • 95g brown sugar
  • 1.5tsp baking powder
  • 2 eggs
  • pinch of salt
  • 1.5tsp matcha powder
  • 150g white chocolate

Method

  1. Pre-heat the oven to 200C.
  2. Mix butter and sugar together until soft.
  3. Add eggs and mix until combined.
  4. Add flour, salt, matcha powder & baking soda and mix.
  5. Finally add the chocolate chips.
  6. Cover a baking tray with baking parchment.
  7. On top, place balls of the cookie dough on top with plenty of space in between for them to spread out as they bake.
  8. Bake for 6-8 minutes or until no longer super gooey in the middle.
  9. Let cool, and enjoy!

Lemon & Yuzu Cookies

Ingredients (15 cookies)

  • 125g butter
  • 250g brown sugar
  • 175g flour
  • 2 lemons
  • 1 tbsp yuzu powder
  • pinch of salt
  • 2 eggs
  • 1 tsp baking soda

Method

  1. Pre-heat the oven to 180C.
  2. Mix butter and sugar together until soft.
  3. Add eggs and mix until combined.
  4. Add flour, salt, yuzu powder, zest of 1 lemon & baking soda and mix.
  5. Add the juice of both lemons.
  6. Cover a baking tray with baking parchment.
  7. On top, place balls of the cookie dough on top with plenty of space in between for them to spread out as they bake.
  8. Bake for 10 minutes or until golden brown.
  9. Let cool, and enjoy!
